After having a big argument with DH, I decided the 1 thing that could cheer me up, was having some good ole comfort food.
I must admit, I am by far one of the greediest people that I know..lol. Just about every situation, puts me in the mood to eat…..bad hair day, feeling lazy, no shopping money, good sex. All of those things put me in the mood for a good home cooked meal.
Last nights dinner consisted of a few of my favorite things: Fried Pork Chops, Corn on the Cob, Loaded hash browns, blueberry muffins and butter rum apples. For dessert, we had brownie ala mode. As usual, if there was a shortcut to fixing a part of the meal, I took it. I guess my entire family was up for some “comfort me food”. There were no leftovers. Here are just a few of the recipes.

Comfort Dessert – Brownie Ala Mode:
Fried Pork Chops
Fry chops in oil til done on each side
Wash the pork chops, then season to your liking with all of the dry ingredients. Afterwards, place them in a pan or bowl, cover with the hot sauce. Cover the bowl with plastic wrap and place in the refrigerator over night. Heat oil in skillet, cover chops with self rising flour, and fry pork chops on each side till done.
Loaded Hash Browns
Place 2 tsp of butter or margarine in skillet til hot, add frozen hashed brown potatoes and chopped onion. Cook over medium heat for about 5 minutes, then flip over the hash browns and cook for an additional 5 minutes. Top with Shredded cheese and bacon cover with lid, turn off heat and let sit for 2 – 3 minutes. (just long enough for cheese to melt.)
Butter Rum Apples
Bring apple juice mixture just about to a boil In a med. sized sauce pan mix the apple juice, butter, sugar (both white and brown), cinnamon, and nutmeg. Heat on med heat until its just about to boil. Mix cornstarch with water in a small cup, then pour this mixture into apple juice mixture. Boil on low heat until it starts to thicken. Add sliced apples, raisins, rum and vanilla. Stir. Turn heat to a very low simmer, cover and continue to simmer for 7-10 minutes or until apples are tender.
