Day 1: Mini Meatloaves and Fried Cabbage

I just wasn’t in the mood for that big hunk of beef. Well let me start over cause that wasn’t going in the direction that I was looking for.

I didn’t want to bother with that big loaf of ground beef. OK much better. As I promised in my last entry, I would try new things and spice up the old. So day 1 rolls along and of course, me not wanting to take a trip to the grocery store, I had to come up with something based on what was already housed in my refrigerator and cabinets. Why not meat loaf with a spin. Smaller portions, the kids will enjoy and so will DH. Will it work?? Yep, it sure did. I served it up with fried cabbage, buttered corn and some type of boxed pasta dish. My husband thought it was the best meal since the last supper. Ok maybe not that monumental but it was dang good!

Fried Cabbage:

1 head of lettuce      6 strips of bacon

1/2 small onion       sea salt (to taste)

1/2 tsp crushed red pepper

Shredded cabbage which just began cooking

Cut cabbage in half and then slice in very thin strips. Dice onion. Cook bacon strips till done then remove but keep grease in the pan. ( Now I prefer to cook my bacon in the oven, it makes  more grease and its easy to just pour off into the skillet.) Add sliced onions and sliced cabbage. Keep heat at med. Cook for 5-7 minutes then turn and cook the same amount of time. Season with salt to taste and add red pepper. Stir and allow to cool approx 5-10 minutes.

Mini Meat Loaves

1.5 – 2 lbs of ground beef      1Tblsp garlic powder

1 package of stuffing mix*     1/3 C BBQ Sauce

1tsp salt                               French Fried Onions

Muffin Pan                            Shredded Cheddar Cheese

*and yes…I said stuffing. As in stove top of one of those others they sell. its perfect because its already seasonsed and it seasons the meat perfectly.

Super easy! Preheat oven to 350 degrees. Mix all of the ingredients in a bowl (except the french friend onions and the cheese).  Spray your muffin pan very well with non stick spray. Shape meat into balls and press down into the muffin pan. Use your spoon to place a small dip in the center of the meat. (This allows toppings to sit on them without sliding off) Bake mini loaves for approx 25 minutes. Remove or brush tops with BBQ sauce, sprinkle on a few of the french fried onion and top with cheddar. Allow to bake an additional 5 minutes. Allow to cook for 10 minutes before serving.

I so love meatloaf muffins! I love the end piece of regular meatloaf because of the “crust” so muffins are perfect because they ALL have a crust! Thanks for the fried cabbage recipe. DH just asked for corned beef and cabbage last week.

I love cabbage — I’ll definitely have to give that recipe a try. My coworker was just telling me that she made mini meatloaves the other day. She got the recipe/idea from Rachel Ray. : )
