Indonesian Ginger Chicken

I found this recipe online, after the hubby requested Ginger Chicken for dinner.
I gave it a shot, lets just say…ill definitely need to tweak this just a bit.
The flavor was great, however I used boneless skinless breast which I cut into chucnks 1st verses chicken parts (legs, brast, etc).
So after baking the chicken it was a little dry, but flavorful..LOL

Anywho, I plan to try it again, but next time using pieces and also possibly grilling the chicken instead of baking it.
1 cup honey
3/4 cup soy sauce
1/2 cup finely minced ginger
1/2 cup minced garlic
1 cut up chicken

Heat honey, soy sauce, garlic and ginger in small saucepan on medium heat for five minutes.
Place chicken, skin side down, in appropriately sized casserole.
Pour marinade over chicken and refrigerate overnight or for at LEAST 4 hours.
Preheat oven to 350
Cook chicken, covered, for 30 minutes.
Uncover, turn chicken pieces over, increase heat to 375, and cook for 30-40 minutes longer, basting occasionally.
