My 2nd Challenge- Chicken n’ Rice

Challenge #2 was from JoVonn  asking how to spice up chicken and rice. I normally make what I called Chow Down chicken which is basically a chicken and rice dish that is SUPER easy.  Ive made this so many times on days that I forgot to take something out or need to put something together quickly.

Price: I normally spend less than $10 to make this dish.

Appearance: Looks like chicken and gravy..LOL not much else to say

Taste: Taste great. The chow mein noodles give it a little crunch. The kids love it and hubby loves it so I guess it taste great!

 The recipe is as follows:

1 1/2 pounds boneless skinless chicken breast
1 med size onion
1 celery stalk
2 cups water
1 teaspoon of butter
Adobo Seasoning or Lawry’s season salt (to taste)
pepper (to taste)
chopped garlic
Chow mein noodles
Rice (white or brown)
3 packs or jars Chicken Gravy
Directions:
Place chicken breast in large deep skillet pan with water, seasoning salt, and pepper.
Cook till done. Remove chicken from broth. Pour out remaining broth reserving about 1/4 of it. Chop onions and celery, sautee in a pan w/ butter and broth. Add garlic to pan. Cook til veggies are tender. Cut chicken into shreds (I used my food processor for this) and set this aside.
Mix the chicken gravy with the sauteed vegetables (follow the directions on the gravy pack unless using jars). Stir over med. heat till gravy thickens.  Add the shredded chicken to gravy and veggie mixture. Cover and simmer for 10min. Spoon over rice and add show mein noodles to the top. Enjoy

Yay! You tried a chicken and rice dish. My FI suggested I make some chicken and rice soon and I will try this one out. he really enjoyed the meat lovers pizza lasagna I made over the weekend. You are my new best friend! :-)
