This recipe is definitely easy enough for a Monday.
My week always tends to start a little slow. The weekend goes by so fast and then monday rolls around. 9 times out of 10, I usually forget to take something out of the freezer the night before so dinner has to be something easy. I made up this recipe, based on items that I normally keep in my freezer. I’m sure there are other variations out there, however…this one works for my family and they absolutely love it!!! For instance, you could substitute carrots for peas, or add mushrooms and sauteed onions, etc. Also, I use evaporated milk instead of regular milk as it seems to make the casserole a little more creamier, however if you only have regular milk, that works just fine.
Tonight, I served it only with canned biscuits and honey. Everyone went to bed with a full happy tummy!!!
Smoked Sausage Casserole
Preheat oven to 425 degrees. Slice sausage and cook in large skillet. Boil pasta til done and drain. Boil peas till done. Spray sides of casserole dish with non stick cooking spray. Add cooked pasta, cream of celery, milk, and cheese (save 1/2 cup of Italian cheese). Stir. Then add sausage and peas. Stir. Top casserole with remaining Italian Cheese. Cover with foil ( I normally spray mine with non stick spray so that it doesn’t stick to the cheese) Bake on top rack for 30 minutes. Uncover and top with French friend onions, bake for additional10 minutes.
Allow to cool for 10 mintes before serving.
